Keeping it Light ~ January 2013

So the holidays have passed and its time to get back to base-line.  After a few weeks of decking the halls with many sweet treats, cocktails and rich foods what a great way to celebrate than with friends and new menus!  Our January gathering was featured with a 12-hour slow roasted pork.  So you think "not so low calorie".  But the recipe is featured in "Suzanne Somers' Get Skinny on Fabulous Foods".  The pork was absolutely amazing.

We had a great showing with a new member, Nina.  We are now a group of 9!  I need to remember to take more pictures when we meet.  I get caught up in the conversations and forget!  In addition to the group I need to remember to take pictures of the fabulous food everyone makes.  What a talented group!

We enjoyed sangria along with a host of yummy dishes.  Our menu included:

  • Shredded Brussels sprouts with bacon, shallots and a dash of red pepper flakes - me
  • Flour-less chocolate cake  - Thank you Cindy!
  • Baked apples with cinnamon and whipped cream (no sugar of course!) - Thank you Cindy!
After many tries of using the timer on the camera we got a decent group shot.
