Breakfast for Dinner ~ April 2014

You know those days when you run around, errands, appointments, kids activities and then its time for dinner!  What to make?!?!?  My kids love breakfast for dinner and they were so excited when I came home with leftovers from our latest meeting.  Once again, the cooking club girls brought it home! Such yummy delights...

We met at Denise's home - so warm and inviting.  I think what made even cozier was arriving in my PJs (again... we were celebrating the whole breakfast for dinner... so why not?).

First off were Betty's Bloody Mary's - nice and spicy with a great garnish that included olives.



Denise made mimosas with a kiss of grand marnier... so yummy.

Jeanne brought a red sangria - filled with tons of fruit...


The table was full! So much to choose from...  doesn't this spread look amazing???

Nina brought a smoked salmon spread... it tasted like spring with the herbs that were in the blend.  Served with slices pumpernickel bread...  So yummy.

Bacon & Egg Muffins

Betty brought savory corn bread bites.... Bacon-and-Egg Muffins.  Served warm with bacon baked on top and a side dipping of syrup.  Yummy!







Jeanne brought these cute eggs baskets - eggs cooked in a hash brown cup.  They were almost too cute to eat.   These would be so cute for an Easter Brunch...

Ever have a pie - filled with meat and cheese and stuffed in a pizza type crust???  Cindy brought Pizza Chena ~ a southern Italian savory pie.  Traditionally this pie is made on Good Friday and eaten either Easter Sunday or Easter Monday.  The link in this blog is slightly different as it includes roasted red peppers - but you get the idea.  I already got the ingredients to make pizza chena this weekend!

Cindy also brought her traditional Easter  bread ~ Pigna is a traditional Italian sweet bread flavored with anise.  She made individual loaves... they looked so cute!

Denise made this ooey gooey baked french toast with a praline topping.  It was just as good the next morning.

Angi brought granola cups filled with yogurt and fruit.  Again... creative, fun and great tasting.  Another great addition for an Easter Brunch.

I brought blueberry streusel bars with a lemon cream filling... I used a package of Wyman's frozen wild blueberries.  I defrosted them in a strainer so they were not too soggy and at room temperature.  Next time I would use 2 bags of berries!

Another fun night with my Scituate cooking club girls... such a talented, fun and creative group!  Notice the Pjs worn by Jen, Nina and Betty... love it!  I believe Henry the pup is snuggled with Denise...
