
Such a cute display when entering Betty's home.... egg shells filled with different pastel paints & some serving as pots for little plants... eggs ready to be colored or painted... stuffed bunnies.... her kitchen screamed of Easter and Spring!
Honestly, the creativity of this group of women always amazes me... the cooking... creative decorations... artistic skills. Just awe inspiring.

There was a small group this month. Being Holy Thursday just before Easter many were traveling or simply too busy to meet. Our evening included younger chefs... or artists... who helped decorate eggs and enjoy dinner. Speaking of dinner... yes this is a cooking club - I made baked eggs in polenta. Super easy mid week dish. I modified this recipe - but the process of baking the
polenta in a cast iron skillet makes this a one pot meal. Jen made Easter pie... similar to a quiche. Jeanne made an asparagus salad - really light and tasty. For dessert we had mini cheese cakes.... quick easy dessert with a crushed graham cracker crust but dessert is a must!
