Today is the first day of Spring... at least by what it says on the calendar. The backyard is still covered in a blanket of crusty white... the streets are lined with piles of dirty snow. BUT... Spring will come - right!?!?
We pushed the thought of Spring forward in our cooking club gathering - lots of green colors, flavors of lemon and fresh flavors. Another flavorful evening filled with plenty of good conversations and many laughs.

Jeanne brought a yummy asparagus frittata cut into little pizza like wedges - great way to kick off the night. Nina and Betty both brought soups... green soups... but both so different and delish! Betty brought a warm zucchini and cheddar soup with these amazing homemade croutons that just soaked up all the flavor.

Nina brought a cold
spring pea soup.... served with crunchy
prosciutto bits, chives and this amazing spicy harissa oil that just added the right zip to the cold soup.

Denise brought grilled shrimp and an spring salad (filled with feta, olives, bite size tomatoes and plenty of greens) with a clean crisp salad dressing.

Betty brought a zucchini casserole - warm and delicious. Creative ways to use up all that zucchini you have late summer!

And for the grand finale.... Angi brought lemon bars with a meringue toping. These were the epitome of SPRING. Lemony - sweet - light - tart.... really good.

Another great evening with my cooking club girls... thank you all for making this work! We missed you Jen and Rita. Hopefully in April we will all be together.
